Water heater bypass valves

Greetings Escapees:
I'm a humble RV newbie and first-owner of a 2023 Escape21E. I have not taken it out yet.
This spring, I am learning how to use shore-power by plugging-in to my house using the plug-adapter that came with the trailer. Most things are working fine; the 120v air conditioner and wall sockets, for example.
Also, the solar-panel & lithium battery system has checked out OK, too.
I ran into a snag after filling the fresh tank and checking out the
system. The tank, pump, and faucets work fine. I get water through bith hot & cold faucets.
But, while checking the propane-&/or-120v water heaters, however, the water would not heat. The propane heater fired-up OK while I watched it through the outside panel open.
So, as soon as I saw that it was burning, I then hooked up the 120v shore-power, came back in, and turned the water-heater switch on. It's above the kitchen cook top.
Immediately I checked for hot water from the faucet but got cold water only. Returning to the outdoor panel, I saw that the propane burner was off but the anode was warm. Cluelessly, I pressed the big black reset button nearby on the panel and in a moment the propane burner fired io again.
After a while, I checked the warmth of the faucet water and concluded that neither the propane nor the 120v electric heater were heatining the water.
The I remembered that in the water chapter of the Escape Owner's Manual, they had instructed me to be sure that the water heater's by-pass valves were not bypassing the heater. The manual illustrates the valves and I had looked for them, but I couldn't find the.
My last guess, based on the above story, is that the water-heater tank is being bypassed by the water coming to my hot water faucet. I would gladly set the valves right but I cannot find them. They don't appear under the table-seats at the rear of the trailer. I looked.
Where else should I look?

My guess is that there is no water in the heater tank and the valves are in bypass mode.

I say this because you are getting a good flow of cold water from both faucets.

Also, if the propane started ok and ran for a bit then shut off but started again when you pressed the reset button that would indicate no water in the tank. The reset button popped when the temp in the tank hit the high temp limit and shut down. Thats why the anode could be warm.

There should be no damage to the system when doing this with propane, but running the electric without water will burn out the heating element.

Start over when you know you have water in the tank. My guess.

I found the valves, switched them, and listened as the water pushed the air out through the hot faucets. They now run water.
Next, I'll check the battery heater, and then the 120v heater.
