Well, I'm committed (to the trailer, not an asylum 
). Signed off on my build sheet last night for the 21C. Here's what I finally went with:
-- 200 watt solar on the roof with controller (decided to go ahead and let them do it rather than myself)
-- dual 6 volt batteries
-- amber porch light
-- move microwave ready cabinet to below cooktop (includes addition of an outlet in cabinet, no charge for this)
-- add 12v outlet to outside passenger rear
-- 120v outlet on bed corner
-- 120v outlet at head of bed passenger side
-- 120v outlet by door
-- counter extensions by door and off of drawer stack at foot of bed
-- framed window in bathroom
-- framed window above drawer stack (last minute addition, wife would like the extra light in kitchen area on gloomy days, as well as the potential cross breeze it could offer in that area)
-- awning light (seldom use the one we have now, but then again it's too bright, like that this one is dimmable...will help facilitate dinners at the picnic table )
-- removable power cord
-- lowered door handle
-- rear access panel to area below dinette driver side only
-- driver side outside shower
-- sand pads
-- dometic AC (my apologies to the group who pushed hard for the alternatives, but after speaking with my ambassador, who has the dometic, decided that is what I'd stay with...I think the 11k versus 13.5k may be a bit better at removing humidity and it's often quite humid where we camp...our present camper is a large popup with a 15k coleman 15 plus which is also loud; if I change my mind, it's doable )

-- reinforced walls for bed/shower & above drawer stack
-- standard dinette with pedestal mount
-- kitchen backsplash
-- cable tv outlet
-- filler board with cushion (will use this so that the dinette can still be made into a pseudo U dinette...also may use it without the cushion and put the dog's bed there...will have to wait and see how that works out in person, otherwise he can sleep on the floor under the dinette like he does now (but is often on the sofa come morning lol...yes our popup has a sofa and a dinette, as well as a wet bath ).
Vinyl is New Castle Knights armor, fabric Valour chocolate, formica is silver quartzite with cream trim, decal is battleship gray (closest match to my truck and a nice neutral color). The Volour fabric is interesting....tested it by rubbing the sample on the dog (lol) and it's fairly easy to remove the dog hair from and I like the reflective sheen it offers within the pattern).

But because there is a wall on both sides in the 21C this gives us full use of the mattress and we continually laugh about never having to complain about who's hogging the bed.
