For a fifth-wheel it can be pretty much the same thing, set up in the truck bed (for height)... probably using the higher ratio to handle the pin weight. You can use a pipe under the pin the same way they use them on the ends. I would rout grooves to locate the pipes, use something much stronger than a 2x4, and probably use a jackstand instead of the brick on one ends and a jackstand on top of the scale on the other end.
