Good point, Jim - even a pressure cooker has a set pressure, and will release steam and air to avoid exceeding that pressure. Unless that set pressure is exceeded, nothing comes out.

The Can Cooker is a pot intended to be used closed, including as a steamer. Although the lid has clamps, it has an open vent so it won't build any significant pressure; it's not a pressure cooker.
