The "indentation" isn't necessary on a boat...

The "indentation" isn't necessary on a boat either. It's there to accommodate the cutting board to create a flush surface when you're not cooking. On a boat you'd use the supplied pot holder...

I doubt Escape will install it, but you could always ask. If they agree to install it, I assume it would be like most other custom parts - not installed at the orientation, but during the build....
