Even though mine does not open, I enjoy my kitchen window. It adds light, plus I like to look out. I would suggest also a drawer in the wardrobe cabinet, if you can get one.
I got an outlet on the stove cabinet front for hooking up a hairdryer to use in the bath (door is hinged on the right per my request). It also comes in handy for the electric coffee pot that sits on the stove cover and the cord does not snake from the end by the sink where the stock one is. I also often use it for charging.
Just some additional thoughts.

Yes, it is my impression that most Escapes by far have microwaves. Some people may buy their own. I don't know if there is any difference in the way the cabinets are built if you don't get one and whether one can always be easily added. Some people just never use them and want the space for something else. If you have one and think you will use it but never do, I expect it can be easily removed and sold or used elsewhere. The problem might come in on the cabinetry where someone decides to get a bigger refrigerator as an option and then maybe the microwave has to go somewhere other than the standard space.
