Yes, 19' owners can also raise the benches. Buyers of the 21' should note that benches on a 21' cannot be raised.

You get more lounge space to put your feet up. That is what people often do with the U. More comfort. Some have added pieces to make the U end larger.

In the 19' we saw that had bed and dinette reversed, they are using the dinette for a bed, making it up every day, in addition to the other smaller bed at the front, using both beds.
