I would just put it in "tow" mode and not be in a big hurry to get up those hills. It will pull it up fine.

i put my F 150 in tow mode its hauls beautifully we did a lot of mountain ranges in Canada last year never seemed to be working hard stayed up with traffic easily . i love using the tow mod for going down set you speed and the truck manages it. i don't mind listening to the engine work it would be making the same noise if i was down shifting to use the engine to slow down going down hill.

Many many issues can be easily resolved by simply slowing down. Good advice.

Or, by stepping on the accelerator. I think that's why it's there.

I find that cranking up the radio volume helps with the engine noise problem.

The Gen2 trailers are heavier and a 21 with the most storage of any Escape trailer. Could easily be 4500#. Add things inside an F150 and the bed could make it "sloggy". Food for thought when contemplating a Crossover V-6. Would think the OP would be very happy with an F150 3.5 EcoBoost. Torque is your friend.
BTW, our 5.3 Vortec in our Yukon does the job in spades, and the engine braking is awesome. When rotating tires at 98K recently I asked what the pads were like. "Fronts look new(original), rear need replacement."
