Newbie HWT question

We have the the water heater with the 120v option. So reading the manual, it is acceptable to run both to heat the water more quickly. Thats okay if you're in hurry.
My question is, why not leave the 120v switched on all the time, as long as you know that the tank is full? If you are not hooked to shore power, it won't be energized, so what harm could come of it?
