Omnia Cooktop Oven and Dickinson Cooktop
We baked cornbread in the Omnia cooktop oven last nite. We are using Whole Foods 365 cornbread mix.
The Omnia oven fits nicely above the Dickinson 2-burner cooktop's large burner. We set the flame on the lowest setting.
Cooking is such fun chemical experimentation! 30 minutes later you see AND enjoy the results! We baked this at 7000 ft. elevation, so timing may be different for lower locations. Measure progress toward a 195 degree internal cornbread temperature.
Our favorite cornbread toppings are Kerrygold Irish butter and tupelo honey.

Now I'm craving cornbread, so I have to make some. I blame Gus.
But I don't have an Omnia, so I may try covered cast iron on the stovetop.

Don’t have the new trailer yet, but cast iron, fresh ground corn, and sourdough starter, along with my wife to prepare it, make for some great cornbread! I’ll be glad to get the trailer, cut a hole, and drop the Dickinson in. The newer Dometic certainly seems to be an improvement on the SDS, but the altitude limitations could be a problem for some.

I bake cornbread and rolls and biscuits in cast iron on my 2 burner cooktop. But I use a cut off inverted cake pan to put on top of the skillet. That pan is about 1/2" high so creates a heat space, the cast iron maintains a constant temp, and baking without burning is possible. Of course a tight fitting cover completes the oven effect.

Interesting... I have a covered skillet, but maybe I'll experiment with other lids eventually.
