We find the absence of counter space can be a problem. To overcome this, I have built a portable counter unit which sits on top of the stove. It provides us with nearly 4 sq.ft. of extra workspace. When the stove is needed, the portable is placed on the bed where it continues to serve it's purpose as a prep space, or a pot rest. When on the bed, it can be turned over, so that liquids are fully contained inside it's base.
