I suppose if you can get separate power circuit to it.
On our 21' with the U-shape dinette, you could route the circuit to the lower cabinet that houses the range. Would still have to route it to the upper cabinet?
Would it be possible to mount a microwave / convection hood combination over the range in lieu of the range hood?
I'd find what it weighs and contact Escape to make sure it wil not cause problems. I'd hate to read in a few months where you are experiencing fiberglass cracking in the roof area.
I just put in a Sharp SMC0711BB in the same trailer. It fits without removing the door, and the door rotates up high enough so that the microwave door clears it. Be sure to get the black model because the stainless one has a handle that sticks out. Also you will need a 90 degree plug adapter to allow the cord to sit flush.
After reading all the recommendations, we've bought a Farberware 0.7 cubic foot, 750 watt microwave to use in our 19' "ski cabin" this winter. It fits into the space with the door closed but only if it is not plugged in. Plugged in, it sticks out 1/2 inch, so we've removed the door for the winter. It's currently stored just aft of the dining table pole, in a large green Rubbermaid box, stuffed on all sides with bedding to prevent movement. I expect we'll tied it down in the truck bed for travelling to Whistler.
I had been using the Microwave area as a pantry (in addition to the long, narrow space under the sink, where I keep tins of soup, tuna, etc) and needed to find a new place for all the remaining pantry items. This led to a rearrangement of my storage which works much better for me: pantry items right above the sink and plates, bowls, glasses, mugs above the forward, passenger-side dining seat. When the microwave returns to storage at the end of the ski season, I may keep the space empty and door-less for the cats to nap in!
Also in anticipation of wintering in the Escape 19, we eliminated all outside access to storage areas under the sleeping and dining areas. It did not dawn on me until after we'd already picked up the trailer that it would be useful to have access to the forward area under the passenger side of our U-shaped rear seating/sleeping area. (Our sleeping area comprises two bench seats with an insert spanning them with another insert added at night). We measured twice, measured again at Reace's request, and got a door to cover the hole we cut at the forward end of the bench seat.
I am astounded by how much storage there is in this trailer! More than 50% of it is empty at present, and even when we have our ski clothes and winter clothes with us, we won't be using the area under the dining seats or the aft part of the sleeping area benches.

Fred I don’t know how much room you have, but these Contoure micros with the trim ring look really nice. I guess you’d have to get pretty lucky for it to be the right fit though. Could always go up one size if you have too much room.

Fred, you are welcome to tour our trailer anytime. We will be in Quartzite on the 5th.
I installed an inverter type Panasonic microwave. It is probably the best choice for inverter use as you can dial in the power you want vs the on/off control of a regular microwave.

As seen in an Oliver. This is the RV-950S though (1.0 CU FT). These look slightly too big though if you have the stock cabinet opening that Escape says is 18-1/2” wide x 11-1/2” high. The previous one I sent (0.7 CU FT) would fit though and depending on how the trim ring is situated it may fill in the slight gap and then just overlap the cabinet slightly since the trim ring dimensions are 19” wide x 12.7” high. Could look really good if you could pull it off.
