In a rare event, I am completely in agreement with Jim Bennett's well-articulated position, even though I am not myself a hunter.

I have harvested a considerable number of buck deer in the past 50 years. I own only the first little set of antlers I harvested, which I use for rattling. The rest I have given away or cut up for Boy Scout Neckerchief slides. I'd rather eat a squirrel or a rabbit personally. Rather hunt them too.

I dunno Dave. I like Rabbit, but not fond of Squirrel. Now a nice Venison roast or a dutch oven stew? Yum.

Ride of the Valkyries
My son Clay and I were hunting wabbits at the familwy farm when we got checked by the Game Warden. He opened his twenty question routine with "Do yo have permission to hunt here"? I started with "Mom says it's o.k." From there Clay came from around the big bales singing Kill the Wabbit, kill the Wabbit. Like he was an opera singer. The warden ended up not even asking for our licenses and left in his pickup laughing at having met two snow crazed Bohemie wabbit hunters. I've dealt with my share os pepe' la pews over the years, civit cats too.
Them guys running around at Niagara Falls brought back memories.

Jim,
It's raw venison.
Just started cooking it and snapped a picture to show a friend who is very fond of deer meat.

I have no problems with pictures. I grew up on a diary farm where we raised all kinds of animals for food. Some of my fondest memories as a child were going with my grandfather when he chopped the heads off a couple of chickens for Sunday dinner. Fun stuff for a farm kid! The smell when grandma poured boiling water over the chicken feathers.... no so much! There always seemed to be some animal hanging by its ankles in the cold slaughter room. So, while those are my memories, I'm still grateful there's "Safeway"!

I've eaten venison, moose, beefalo ( cross animal ), eland, impala and wildebeest. A lot has to do with the cook, but I only enjoyed eland filet and gnu liver ( of all things for a kid to like ).

Years ago there was a place here in NH that had a wild game night, I believe it was once a month.
I've had some very exotic game meat, one that I didn't want to try but did was kangaroo. It was a lot better than I imagined and glad I tried it. Others were alligator and muskox.
For me venison is hands down the ultimate game meat!

I used to go to these here in AB too, but haven't been in 10 years. A great way to sample lots of wild game, all of which is cooked up great. I even ate rodent, and quite liked it, beaver it was.

I watched this survival type show once where they ate porcupine and they all liked it, although the work involved in skinning such an animal is a major chore.

Well, I didn't get my wild meat in a fancy restaurant.
I ran back to the Land Rover, got more shells and handed them to the hunter who got increasingly angry as he pumped one after the other into the wildebeest's forehead from ten feet away and it still wouldn't go down. I didn't know the bullets were that expensive . Finally an African ran up and slit its throat with a panga ( machete ). Had the liver for breakfast next morning.
