The step on mine drops down when pulled out. Seems like that one, the drop down, would be best on a high-rise build option.
Then the straight-out, step option seems like (to me) it would be best for the lower, standard height build option. I dunno. Hope that makes sense.

I don't think so. The straight out step on a standard height trailer makes for a 14" high first step up and then a 7" step to trailer floor level.
In a ground sloping away situation the first step up would be even higher.

Yes, there's two styles that seem to be used by ETI now and they don't seem to make sense to me. The straight out style, which I saw on at least two models in the showroom doesn't seem suitable, making for that high first step. The pull out drop down style that's been used for years seems much more suitable.

I still don't have a sense how many new trailers have been equipped with the straight out step.

My new 5.0 with lift has the single non-dropdown step that is 15" from the ground at my current location. I have planned since I ordered it almost a year ago to see if the Glowstep Revolution (2 step version) would fit. In the meantime, my dog, my visitors & I appreciate the standalone step that I used inside my previous camper to ease access to the raised wet bath and bed.

When parked at home, it’s at nearly equidistant between steps. About a Hoosier 11.0”/11.0”, (+/- 1.0”).
Yep, my at home pad is sloped, and I have an Anderson clone leveler/ramp, elevating the trailer by about 3.5” above ground. I’m fairly comfortable with both steps at 11”, but I’d rather have 7” steps.

That is most interesting, and opens up a plethora of questions. Can it adapt to a variety of slopes while keeping the stair rise at 8.0”? Will the company work with you to get it adapted to an Escape? Otherwise, it’s 22 Inches wide, and folded ground clearance may not be too good on standard height Escapes.
Although quite expensive ($600), it is tempting—after hearing your feedback report back, of course.

It looks to me like you have the "old" style pull out, drop down step making for almost equal steps up.
Most of the time it's fine and much more preferable than a 14" step up but there have been times on slopes that I thought that another step would be nice.
Someone else can go first and let us know.

In the photo, I’m on a slope, with a 3” leveler under the tire on the door side. On level ground, it’s 7” up then another 11-12 inches up. Not equidistant.
So I have to seek out sites with a 3” slope.
I do hope that someone finds out that the parallelogram steps solve every slope, and keep the steps at a decent and equal height.

I can't speak to keeping a specific uniform height of steps but it appears that with the adjustable "landing gear" that various slopes would be handled fine.
The problem is that the Escape steps framing is way short of the 25+" that the top of the line model appears to need. Tho this is my "dream" step I may have to be happy with something less.

I’ve used scissor steps like that on pickup campers for years, but the ones I’ve seen are for heights greater than 30”. I typically want 40” or so for that.

^ I would love to have that Lippert 2-step (or the MORyde version) on our lifted 15A but the aircraft style door just won't have it.

My 13 year old 90# dog has bilateral knee arthritis (she's a mastiff mix - not large-for-stature.) I found her car ramp settles and stabilizes quite nicely into on top of my Escape step - in effect also raising that last step into my trailer, while still allowing the door to open/close. While my goal was enabling her continuing to enjoy the Escape, I'm finding it personally advantageous, as well.

I had one
I had one, the same model as in the video. I used it for our aging golden retriever to get into the car hatchback space.
That model is sturdy, but heavy and awkward to handle and store. My advice is to look for the lightest weight type that can handle the weight loads.
I think I'd build my own next time, a folding, 1/2" plywood with stringers to carry the load with Astro turf type carpeting for grip.
Here's one design that I'd modify with edge stringers to stiffen the ramp.
