We have a suction holder for the shower head and a suction hook for the towel. I take an all-weather mat out of the vehicle to stand on so mud doesn't splash up. Small table/stool for soaps.

My buddy models the set-up.

I do have a roll-up aluminum table, but we do dishes inside or at the provided picnic table. We have a stainless steel tub that i can place on the one-burner butane stove to heat the water.

No help here, but I was thinking it would be a great option to have a small dish sink table that attached near the shower for dishes, and was made to store somewhere convenient.

I use a fish cleaning table. You can get them at most any large outdoor store. They are the perfect height for a spout attached to your outdoor shower. But it won't fit in your rear hatch. I carry it in the bed of the pickup, but I have an idea or two about carrying it on the rear bumper.

We have a 19 with the outside shower on the passenger side so I'm not sure if the height is the same for your 21, but we use one of these:

REI Camp roll table

which folds up into a nice, compact package and comes with a sturdy carry bag. We also picked up the articulating spout and the combination makes a nice wash station.
