Not hard. Going to be enjoying some of these on a steelhead fishing trip this week.

What kind of oven thermometer are you referring to? I would love to have one on the outside of the oven door!

Make sure they are the Airbake insulated brand. I take the 2 small sheets from the 3 piece set with me. The large one doesn't fit. I also have the 9x13 insulated cake pan for casseroles, etc and a 9" square cake pan (I put a cookie sheet under). .

Hi,
So is this to say that you can use the airbake pans all by themselves and get ok results (no hot spots?). I think I'm going to get a couple of these if so. Thanks

I agree, but this really means "don't turn the pilot off"; you can turn it down (so the main burner won't come on) when you think you're done, but leave the pilot going until you're sure that you don't need the oven again for a while.
This leads to a second caution: left on pilot, there is a continually running propane flame, causing a potential burn hazard, consuming oxygen, and putting exhaust into the trailer. All of that is quite manageable... just don't forget about it and leave it for hours.

There are little thermometers that go on the inside. You are supposed to be able to see them from outside of the oven so hopefully you could. They are little round metal ones.

Jim - Did you purchase the Dickinson as a 'stand-alone' unit or did you have it installed in place of the stock oven/range? (I noticed it said "shipped on a pallet" which made me wonder.) Also, for those who use the pizza stone ... do you use it in conjunction with pans when, say, baking cookies?

I installed it as part of the galley when I built it. There was nothing there for a galley when I picked the trailer up.
A stone works great for any baking. It helps keep an even temperature in the oven, eliminating hot spots.

Weber has a wireless setup. Could probably fish a probe down the slots at the back of the oven, too. This is the fancier unit:

Pizza Stone
We bought a pizza stone to help regulate the oven temp. Just wondering if you put it on the rack or the floor of the oven or over the burner?

On the perforated shelf where the burner is mounted. Under the rack.

Whether baking in a BBQ or oven we place the stone on the grate or rack, with the pan right on top of it. This has worked great.
Pizza goes right on the stone.

We have the oven and i have used it for roasting meat. Can you remove the top rack? There is not enough room between the two racks but I could not figure out how?

That is where mine is located. I usually position it (mine is square) so that the front holes are half covered.

Ours is on the shelf also not the rack simply because if I put it on the rack the food would be too close to the top of the oven.
