The answer is 2 5/8” for a 2” ball. The “pedestal” is 1” high. The ball is flattened at the top and bottom so the pedestal and ball together don’t add up to 3” as you might expect. A 2” ball is 2” around it’s equator.

On etrailer they measure from the top of the receiver opening. So a hitch with no drop would come out level with the top of the receiver. Hitches with drop or rise are measured from the top of the receiver to the surface on which the ball sits.

Having the trailer slightly nose-down is fine (nose-up is not okay). Don't obsess over getting it perfectly level.

A two inch ball is two inches in diameter.
“Around the equator” is 6.42 inches or so. Diameter times Pi. Or 3.1416 and so on times two Unless the Governor of Iowa has decreed something different.
