MyJo
Colleen gave up coffee years ago (once she got me into the habit). I use the MyJo Kuerig (add heated water, the pod and press). I am not that particular with coffee (I like it fresh) but this gadget works great for my needs.

Easy coffee
We ARE coffee drinkers and I find the starbucks viablend packages great! We like to use them for dry camping. Nothing to clean, no extra weight or space of a machine.
Sometimes less really is more 😊

Have gotten lazy after turning 70. Like coffee but not too much effort or mess. Found this that works for us: https://www.amazon.com/CHULUX-Single..._dp&th=1&psc=1

I thought that was what trash containers were for. You've been disposing of your coffee grounds on the road?
Kidding!

We use a pour-over and fill a thermos on driving days.

And, to get rid of the grounds, you simply invert the filter holder. Grounds and filter holder drop into the trash ( or compost ).

The misus and I use the Bialetti 6 cup moka pot perfect for 2 lattes. The foam part of a cappuccino is solved by a $5 battery operated milk frother. Or we just boil extra water and make Americanos.

Coffee pot
I have been using the same coffee pot that I have been using since 1970s, it is aluminum it is 8 cup percolator whether it's on an open fire, a camp stove it works. Besides sterilizing the water by boiling the strength of the coffee depends on how long I let it perk. It still works and I'm still keep using it.

We love percolator coffee. Only thing we drink at home. One downside is regulating the temp on a non-electric. Too hot turns the coffee acidic.

Yes, a good pot can be made with a percolator, and like you mentioned the biggest problem is perking too hot, and also too long. 3 minutes usually works great, any more and you also chance the coffee taste diminishing. Percolator coffee is good.

fyi, that double strength split mug works for hand pour drip too. I use a #4 melitta "one-cup" filter on my large mug, but put enough coffee in it for 2 cups, do a very slow hand pour til that first mug is full, then split it and top both off with hot water, excellent.
a #4 filter can make as much as 8 "cups" (really, 4 mugs), as thats what our 8 cup home electric dripper uses. key is, dribble just enough water in to wet the grounds, then wait a minute before dribbling more in, don't just fill the filter and let it fast drip, and you get much better extraction. our home electric dripper has a mode that does this automatically, called 'presoak' and it makes much richer tasting coffee from the same beans (usually Moka-Java or Kenya AA or Indian Malabar or Tanzania, always light to medium roast, and always fine ground just before brewing).
