I'm struggling with understanding why anyone would use stuff to knock down the smell rather than eliminating the reason it smells.

Get rid of the trapped piping and the smell is gone forever. It's not that hard to do.

If you are staying at a campground with full hookups are connected to the sewer system, keep the trailer black and grey tank valves closed and open the valves to dump when the tanks are half full too avoid sewer gas in the campground system.

+1 on this, it also prevents the TP Teepee syndrome in the black tank. and after dumping the black tank, always run enough water into the toilet so there's an inch or so of standing water in the bottom of the black tank, this takes 1-2 gallons typically.
