Fresh water fill from jug
Has anyone figured out a way to hook up the internal water pump to a 5gal jug or similar and use that to refill an empty fresh water tank, in the situation that no water supply is available?

We carry a spare water pump, 12 ft of wires, a 12 V cigarette lighter power adaptor, and 2-5 ft pieces of hose. We winter in Mexico and buy the blue purified water containers to fill our water tank. Takes about 10 minutes 1x a week to refill our water and we have no health worries.

Like this?
Yes, a little 12V pump can be very handy for refilling the water tank.
I also have a jerry can with a short rigid spout. Very handy because with the spout partly into the filler it doesn't take much effort to hold the jerry can in place.

I've not tried this, but had mentally filed it away as a possible solution for when needed...
If you have the winterizing T setup up you can place the winterizing hose into the fresh water container and draw directly from the jug using the trailer's pump. It seemed like it might be worth a try.
It certainly works with a 1 gallon jug but is probably not worth it for such a small amount. Maybe a hose extension can reach into a larger container?

That's sort of what I was thinking of, except also finding a way to direct the water from the jug through the pump via the winterizing hose, and into the fresh water tank, rather then leaving the jug in place.

I have three 5 gallon water jugs with spouts on them. Second I have a I gallon ice cream bucket. Next, in the bucket I keep a 12 volt Zodi pump with a 12 volt cord on it. Finally I travel with a battery booster pack for emergencies which I use a couple times a year to help get someone going. Finally my trusty lawn chair. Pump in ice cream bucket. Pump plugged into booster pack, hose off of pump into water fill,5 gallon water jug tipped to run into the ice cream bucket. My large body comfortably seated in my chair. 15 minutes or so to set up, pump the water, put things away. My back thanks me every time Rube Goldberg makes his appearance. Last summer 13 of us used the Escape to take showers while camped in a no electricity, no water at site area. 85 gallons in 4 days. Strong sons and grandsons could have held the jugs up and poured the water in. But they liked trout fishing better. Water decanted from the grey tank and hauled to pit toilet with host permission. That’s how I do it and have for several years. Sometimes we heat some water on the camp stove and get the temp right and give our dog a bath if he has an encounter of the stinky kind. Pump works good for that too.
That’s my story on pumping water. I have used a 2 gallon collapsible container and a flexible funnel but I usually end up looking like I wet my pants, again.
On a side note, don’t forget that you have some grey water capacity in the black tank too if you decant water outside and bring it inside and pour it into the toilet. Can give you an extra couple days. YMMV

We have used low tech gallon water containers (yes - you need a few to make a difference) to fill an empty fresh water tank (enough to last our last day or so at the campground). We have a funnel that made it easier. A full 5-gallon container is kind of heavy to use in this way.

We use a 2 litre plastic soft drink bottle. Cut an oval hole in the side, put the spout end into the fill hole and then pour the water from our jugs into the oval hole. This takes 2 people but is very quick and no spillage and only a simple 2 litre plastic bottle to store!!

I use the 5 gallon water cooler style carboys... and have a hand pump for one that uses air pressure (it pumps air into the bottle, which forces water out the spigot). I have a piece of clear vinyl hose that fits snugly over the nozzle and into the water fill opening on the trailer. i put the jug on a inverted milk crate next to the trailer, pump-pump-pump, wait... pump-pump-pump... wait... pretty soon all 5G are in the tank, time to refill the carboy and repeat.
We're doing an extended mexico trip in a couple years, I might have to invest in a 12VDC water transfer pump

First cousin to all of this is the venerable solar shower. We still have one in the camper. You never know when you’ll have the urge to rig up some ropes , get a rubber mat out of trunk of the 82 Buick, some blue tarps, 93 clothes pins and hang the shower in a three tree triangle. . Make sure you set up some lawn chairs on the shadow side for entertainment. Everybody gets one bag to get clean. This is initiation into the Honyocker Boondocker society. Iowa style.

Sounds like the answer to your question is NO. Since the Escape's water pump is located between the fresh water tank and the trailer's faucets, and because there's a check valve in the pump to prevent reverse flow, it would take some fancy re-piping to make you idea work.
On the other hand, remember that in the piping just before the pump is a valve to switch incoming fluid from the fresh water tank to a jug of winterizing antifreeze. You could extend the antifreeze hose and stick it down into a jug of water and then switch the valve to draw from the jug rather than the fresh water tank. Probably someone has tried it!

they make a small pump that uses your cordless drill for power. Haven't tried it, but thinking about it.

I installed/screwed the winterizing T Valve directly into the bottom of the tank. This way it sucks antifreeze into the supply tube as well. It also allows you to suck extra water from a container.

Kind of slow pump action but it works.
